Chocolate And Cheese Bread Pudding

Bread pudding is one of the easiest dessert to make. Here we have enriched the pudding with cocoa powder, fresh cream, cream cheese and dark chocolate that take it to a next level.

Ingredients

  • 6 brioche bread slices
  • 4 eggs
  • ¼ cup castor sugar
  • 2¼ cups milk
  • ½ cup fresh cream
  • ¼ cup cocoa powder
  • Cream cheese for applying
  • 1 Malta orange
  • 12-15 black raisins
  • 2 tablespoons chopped dark chocolate
  • Icing sugar for dusting

Method

  1. Preheat oven to 180° C.
  2. Break two eggs, separate yolks from the egg whites and transfer the yolks into a large bowl. Break the remaining two eggs into the yolks. Add castor sugar and whisk till it melts.  
  3. Heat 2 cups milk and fresh cream in a non-stick pan till it comes to a boil. 
  4. Mix cocoa powder with the remaining milk in a small bowl to a smooth mixture. Add it to the milk-cream mixture and mix well.
  5. Strain some of the milk-cream mixture into the bowl with egg mixture and mix well. Strain the remaining milk-cream mixture into the bowl and mix well. 
  6. Apply cream cheese on 3 brioche bread slices, cover with the remaining brioche bread slices to make sandwiches. Diagonally cut each sandwich into quarters. 
  7. Dip each sandwich quarter into the eggs mixture and place in a round baking dish. 
  8. Zest the orange directly on top, pour the remaining eggs mixture over it and sprinkle black raisins and chopped dark chocolate. 
  9. Take a deep baking tray with some water in it, gently place the baking dish on it. Place it in the preheated oven and bake for 30-35 minutes. 
  10. Bring the baking dish out of the oven and allow to cool completely.
  11. Dust icing sugar on top and serve.
