These cookies are made with a buttery short crust pastry flavoured with cinnamon, filled with a buttery date paste and cut into thick slices before baking them to perfection. These cookies are perfect to relish with a glass of warm milk.

Ingredients

  • ¾ cup date paste
  • 1 egg
  • 1 egg yolk
  • ½ cup castor sugar
  • ½ teaspoon vanilla essence
  • ¼ teaspoon cinnamon powder
  • ¼ teaspoon green cardamom powder
  • ¾ cup + 3 tablespoons butter
  • 2 cups refined flour (maida)
  • 1 teaspoon baking powder
  • Icing sugar for dusting

Method

  1. Break egg in a bowl, add egg yolk, castor sugar and vanilla essence and beat till light and fluffy.
  2. Add cinnamon powder, green cardamom powder and ¾ cup butter and mix with a light hand.
  3. Sift refined flour and baking powder directly into the bowl and mix with a light hand to form a soft dough. Refrigerate for 10-15 minutes.
  4. Preheat oven to 120º C.
  5. Take date paste in another bowl. Add 3 tablespoons butter and mix well.
    Transfer a portion of the dough on a silicon butter paper, roll out thinly, trim the edges to make a rectangle, apply the date paste and roll tightly. Trim the excess. Make more rolls similarly.
  6. Press with a fork to create design. Cut into thick slices and place them on a greased baking tray.
  7. Keep the tray in the preheated oven and bake for 8-10 minutes. Take the tray out and let the cookies cool down to room temperature.
  8. Dust icing sugar on top and serve.
