Deep Dish Pizza Dough

Ingredients 

  • 3 cups refined flour (maida) + for dusting
  • ½ cup chilled butter, cut into cubes
  • 1 tablespoon active dry yeast
  • 2 teaspoons salt
  • ½ cup maize flour (makkai ka atta)

Method

  1. Sift refined flour into a large bowl, add butter and rub it into the flour with your fingertips till they resemble breadcrumbs. 
  2. Take yeast in a small bowl, add 2 tablespoons warm water and mix till well combined. Set aside to activate.
  3. Add salt and maize flour to the refined flour in the large bowl.
  4. Once the yeast mixture is foamy, add it to the flour mixture along with 1 cup water, mix well and knead into a soft dough. 
  5. Dust the worktop with some refined flour and continue to knead for 5 minutes. Transfer the dough into large bowl, cover with a damp muslin cloth and set aside to prove for 1 hour. 
  6. Knock back the dough. Dust the worktop with the some flour and place the dough on it and knead it for 1-2 minutes.
  7. Use as required.
