Flaky Plum Pastry

These open pastries are filled with plum compote and baked to perfection. Further they are brushed with apricot jam and sprinkled with pistachio powder. The end result is heavenly melt-in-the-mouth delights that are super easy to make!

Ingredients

  • 4 plums
  • 4-5 puff pastry squares
  • ¼ cup sugar
  • 1 teaspoon lemon juice
  • A pinch of cinnamon powder
  • 3-4 cake slices
  • Milk for brushing
  • Apricot jam for brushing
  • Pistachio powder to sprinkle

Method

  1. Deseed the plums. Chop 2 and slice the remaining.
  2. Heat a non-stick pan, add chopped plums, sugar and ¼ cup water and cook for 6-8 minutes or till the plums soften and the mixture thickens.
  3. Add lemon juice and cinnamon powder and mix well. Transfer into a bowl and allow to cool.
  4. Preheat the oven to 180º C.
  5. Crumble the cake slices directly in the bowl of plum mixture and mix well.
  6. Place the puff pastry sheets on the worktop and roll them slightly. Place a generous portion of the plum stuffing in the centre. Arrange the plum slices on top.
  7. Brush milk on the edges, fold the edges slightly so that it looks like open pocket.
  8. Arrange these pockets on a greased baking tray and brush some milk over the pockets. 
  9. Place the tray in the preheated oven and bake for 10-15 minutes.
  10. Take the tray out of the oven, brush apricot jam on top and sprinkle pistachio powder. 
  11. Arrange these pastries on a serving platter and serve.
