Ingredients 

  • 4 readymade kulchas
  • 2 tablespoons oil + for brushing
  • 1 tablespoon finely chopped ginger
  • ½ cup grated carrots
  • ½ cup finely chopped French beans
  • ¾ cup grated cauliflower
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chilli powder + for sprinkling
  • 1 teaspoon garam masala powder
  • 1 teaspoon chaat masala + for sprinkling
  • ½ cup green peas, blanched and crushed
  • Salt to taste
  • 1 medium potato, boiled, peeled and grated
  • Butter as required 
  • Green chutney as required 
  • Grated processed cheese for sprinkling 

Method

  1. Heat oil in a non-stick pan, add ginger, carrot, French beans, cauliflower, turmeric powder, red chilli powder, garam masala powder and chaat masala, mix and sauté for 3-4 minutes. 
  2. Add green peas and salt, mix and cook till the vegetables are fully done. Transfer the mixture into a bowl, add potato and mix well. 
  3. Prick kulchas all over and roast on a non-stick pan till well browned from both the sides, basting with butter. 
  4. Spread a spoonful of green chutney on each kulcha. Top with a portion of cooked vegetable mixture. Brush some oil on top. 
  5. Heat a non-stick pan. Place a kulcha pizza in it and cook on low heat for a few minutes. 
  6. Transfer the kulcha pizza on the worktop. Brush some butter on top and sprinkle cheese. 
  7. Place the pizza back in the pan, cover and cook till the cheese melts. Make the remaining kulcha pizzas similarly.
  8. Sprinkle red chilli powder and chaat masala on top, cut into wedges and serve hot with green chutney.
