Lasagna Roll Ups

Generally lasagna sheets are layered with some stuffing and creamy sauce between each sheet and baked. In this recipe we have spread sauce and stuffing over each lasagna sheet, tightly rolled them and arranged in a casserole and baked.

Lasagna Roll Ups

Ingredients

  • 2 boneless chicken breasts
  • 4 boiled lasagna sheets
  • 2 tablespoons yogurt
  • Salt to taste
  • Crushed black peppercorns to taste
  • ½ teaspoon all spice
  • 1 teaspoon garlic paste
  • 1 medium onion, grated
  • 1 teaspoon cumin powder
  • 2 teaspoons olive oil + for sprinkling + to serve
  • 1 teaspoon butter
  • Grated mozzarella cheese as required
  • Dried red chilli flakes for sprinkling 
  • Green olives slices for garnish
  • Chopped fresh parsley leaves for garnish
  • Black olive slices for garnish 
  • Sauce
  • 1½ tablespoons butter
  • 2 tablespoons finely chopped garlic
  • 2 tablespoons refined flour (maida)
  • 1½ cups milk 
  • Salt to taste
  • Crushed black peppercorns to taste
  • 2 cheese slices

Method

  1. Take chicken breasts in a bowl, add yogurt, salt, crushed black peppercorns, all spice, garlic paste, grated onion and cumin powder and rub the spices well on the chicken breasts. Set aside to marinate for 20-25 minutes.
  2. To make the sauce, heat butter in a non-stick pan, add garlic and sauté for 1 minute. 
  3. Add refined flour, mix well and sauté for 1-2 minutes.
  4. Stir in the milk and mix till you get a smooth mixture. Cook for 3-4 minutes or till the mixture thickens. 
  5. Add salt and crushed black peppercorns and mix well. Add the cheese slices and mix, cook till cheese melts. 
  6. Heat olive oil and butter in a non-stick grill pan. Place the chicken in it and grill on high heat for 3-4 minutes. Flip and cook the other side for 3-4 minutes as well. Reduce the heat to medium and continue to cook till the chicken is done. 
  7. Preheat the oven to 180º.
  8. Finely chop the grilled chicken breasts and transfer into a bowl.
  9. Spread some sauce at the base of a rectangular glass casserole. 
  10. Place a lasagna sheet on the worktop, apply some sauce over it. Add a portion of the chicken and spread it evenly. Sprinkle mozzarella cheese and roll it tightly. Place it in the prepared casserole. Similarly, repeat with the remaining lasagna sheets and arrange in the casserole. 
  11. Drizzle remaining sauce over the lasagna rolls, sprinkle mozzarella cheese and drizzle olive oil. Sprinkle red chilli flakes and place the casserole in the preheated oven. Bake for 10-15 minutes. 
  12. Garnish with green olive slices, parsley leaves and black olives. Cut into equal pieces, place each piece on individual plate and serve hot with olive oil and red chilli flakes.
