Ingredients

  • 1 cup fine semolina (barik rawa)
  • 2 tsps ginger-green chilli paste
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • ¼ tsp turmeric powder
  • Salt to taste
  • Oil for greasing + for deep frying
  • Chai to serve

Method

  1. Put the semolina in a mixer jar and grind to a fine powder. Transfer into a large bowl.
  2. Add ginger-green chilli paste, red chilli powder, coriander powder, cumin powder, turmeric powder and salt and mix well.   
  3. Add ½ cup water and knead to a soft dough. Cover with a damp muslin cloth an set aside for 10-15 minutes.
  4. Grease the worktop with some oil.
  5. To make puris, take a small portion of the dough and shape it into a ball. Place it on the greased worktop and flatten it slightly. Roll it into a small thin disc.
  6. Heat sufficient oil in a kadai.
  7. Gently slide in the discs one at a time into the hot oil and deep fry till they turn crisp and puff up. Drain on an absorbent paper.
  8. Serve hot with chai.
