Ingredients

  • 2 medium pears, seeded and roughly chopped
  • A dash of lemon juice
  • 8 lemon wedges
  • 16-20 fresh mint sprigs
  • 4 tablespoons sugar syrup
  • Ice cubes as required
  • Drinking soda as required
  • Pear slices for garnish
  • Lemon slices for garnish

Method

  1. Put the pears in a blender jar, add ½ cup water and grind to fine paste. Strain the juice through a fine strainer.
  2. Place the lemon wedges equally in 4 individual glasses. Add mint sprigs and muddle with a muddler.
  3. Add the pear juice and sugar syrup and mix well.
  4. Add ice cubes, top up with soda and stir well.
  5. Serve chilled garnished with pear slices and lemon slices immediately.
