Pomegranate & Pomelo Mojito

Mojito is a traditional Cuban punch that tastes minty fresh a little citrusy and a little sweet. Easy to make this mojito is refreshing with flavours of Pomegranate and Pomelo, a non-alcoholic drink, which is the perfect to serve at any party.

Ingredients

  • 1½ cups pomegranate juice
  • 10-12 small wedges of pomelo with the skin
  • 8 tablespoons peeled and seeded pomelo segments, separated
  • 4 tablespoons fresh pomegranate pearls
  • ¾ cup sugar
  • 8-10 lemon wedges
  • 20-25 fresh mint leaves + for sprinkling
  • 2-3 tablespoons sugar syrup
  • 4 pinches of salt
  • Ice cubes as required
  • Lemon slices as required
  • Drinking soda as required
  • Fresh mint sprigs for garnish

Method

  1. To make pomegranate syrup, heat pomegranate juice in a non-stick shallow pan. Add sugar and mix well. Cook till it comes to a boil and continue to cook till it thickens slightly. Take the pan off the heat and allow to cool completely.
  2. Put the pomelo wedges with the skin into a glass, add lemon wedges, mint leaves, sugar syrup and salt and muddle the mixture. 
  3. To make each portion, put 1-2 tablespoons pomegranate syrup into each serving glass. Strain a portion of the muddled mixture, add a few ice cubes, a few lemon slices, 2 tablespoons pomelo segments, 1 tablespoon fresh pomegranate pearls, sprinkle a few mint leaves, and mix till well combined.
  4. Add some more ice cubes and top the glass up with drinking soda. Garnish with mint sprig and serve chilled.
