Yes, that’s how it is – full of fun when it comes to pumpkin sticks, dipped in batter and fried to golden crispiness. By Sanjeev Kapoor 25 Nov 2024 in Recipes Snacks and Starters New Update Main ingredients Red pumpkin, Olive oil, Fresh thyme sprigs, Crushed black peppercorns, Garlic powder, Onion powder, Fresh breadcrumbs, Red chilli flakes, Dried mixed herbs, Cornflour, Parmesan cheese powder, Fresh parsley, Tomato ketchup, Mayonnaise Cuisine Fusion Course Snacks and starters Prep time 15-20 minutes Cook time 20-25 minutes Serve 4 Taste Savoury Level of cooking Easy Others Vegetarian Ingredients 300 grams red pumpkin, peeled and cut into 3 inch thick sticks 2 tablespoons olive oil 3-4 fresh thyme sprigs Salt to taste Crushed black peppercorns to taste ½ teaspoon garlic powder ½ teaspoon onion powder 1 cup fresh breadcrumbs ½ teaspoon red chilli flakes ½ teaspoon dried mixed herbs Cornflour slurry as required 2 tablespoons parmesan cheese powder 1 tablespoon chopped fresh parsley leaves Tomato ketchup to serve Mayonnaise to serve Method Preheat oven to 180° C. Take pumpkin strips sticks in a large bowl, add olive oil, pluck the leaves of thyme and add. Further add salt, crushed black peppercorns, garlic powder and onion powder and mix well. Take breadcrumbs in a wide bowl, add salt, crushed black peppercorns, red chilli flakes, and dried mixed herbs and mix well. Take cornflour slurry in a bowl. Dip each pumpkin strip in the cornflour slurry and coat with the breadcrumbs mixture. Arrange the pumpkin strips on a baking tray, place it in the preheated oven and bake for 20-25 minutes or till golden and crisp. Transfer into a large bowl, add parmesan cheese powder and parsley and toss.
