By Sanjeev Kapoor 20 Sep 2024 in Recipes Veg New Update Main ingredients Red Pumpkin, Potatoes, Onions Cuisine Rajasthani Course Main Course- Vegetarian Prep time 8-10 minutes Cook time 10-15 minutes Serve 4 Taste Mild Level of cooking Moderate Others Vegetarian Ingredients 250 grams red pumpkin (kaddu), peeled and cut into 1 inch cubes 2 tablespoons oil 1 teaspoon cumin seeds ½ teaspoon asafoetida (hing) 2 small onions, sliced 2 small potatoes, cut into 1 inch cubes ¼ teaspoon turmeric powder ¾ teaspoon red chilli powder ¾ teaspoon coriander powder Salt to taste ½ teaspoon dry mango powder (amchur) ½ teaspoon garam masala powder 2 tablespoons chopped fresh coriander leaves Method Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add asafoetida and onion and sauté for 1-2 minutes. Add potatoes, mix and sauté for 1 minute. Add turmeric powder, red chilli powder, and mix well. Add coriander powder and salt, mix and sauté for a few seconds. Add pumpkin, mix well. Sprinkle ¼ cup water, mix, cover and cook for 8-10 minutes or till the vegetables are ¾ cooked. Add dry mango powder and garam masala powder, mix and cook for a minute. Add coriander leaves and take the pan off the heat.
