Spicy Chicken Sliders

Chicken breast halves marinated in a flavourful mixture, dipped in eggs, rolled in cornflakes and shallow-fried to perfection and then packed into slider buns along with some veggies. These sliders are delicious snack to munch on. Serve it along with some French fries and a mayonnaise sauce.

Ingredients

  • 2 boneless chicken breasts
  • 4 slider buns, halved
  • 2 teaspoons chipotle sauce 
  • ½ cup mayonnaise
  • 1½ cups cornflakes
  • Salt to taste
  • 2 teaspoons garlic powder
  • 1 teaspoon red chilli flakes
  • Crushed black peppercorns to taste
  • 2 teaspoons Worcestershire sauce
  • 2 eggs
  • Cornflour as required
  • Oil for shallow frying
  • Assorted lettuce leaves as required
  • Onion roundels as required
  • Tomato roundels as required
  • Cucumber slices as required
  • French fries to serve

Method

  1. To make the spread, take mayonnaise in a bowl, add chipotle sauce and mix well. 
  2. Put the corn flakes into a zip-lock bag and crush it coarsely with a rolling pin. 
  3. Halve each chicken breast horizontally and place them on a plate. Add salt, garlic powder, red chilli flakes, crushed black peppercorns and Worcestershire sauce and rub the mixture well on each chicken piece. 
  4. Break the eggs into another bowl, add salt and crushed black peppercorns and whisk well with a fork.
  5. Take cornflour and cornflakes on two separate bowls.
  6. Roll each chicken piece in cornflour and dust off excess flour. Dip them in whisked eggs and coat then coat with the crushed cornflakes.
  7. Heat sufficient oil in a non-stick shallow pan. Place the chicken pieces in the pan and shallow-fry, turning sides, till evenly golden brown and crisp on both sides. Drain on absorbent paper.
  8. To make the sliders, apply some spread on the base half of the slider buns and top with a few lettuce leaves. 
  9. Place one fried chicken piece on each base half.  Place onion roundels, tomato roundels, cucumber slices over the chicken. Apply some of the mayonnaise spread on the top half of the slider buns and place them on top to make sliders. Secure with a toothpick. 
  10. Place the sliders on a serving platter and serve with French fries and the prepared spread.
