Strawberry Basundi

Basundi is a popular milk based dessert from the states of Maharashtra, Gujarat and Karnataka. It is thickened milk which is served well flavoured and enhanced with plenty of dried fruits. Here we have further enhanced with the addition of strawberry puree.

Ingredients

  • 8-10 fresh strawberries, hulled and halved
  • ¼ cup sugar
  • 3 cups reduced milk
  • 2 teaspoons chopped pistachios
  • 2 teaspoons chironji
  • ½ teaspoon green cardamom powder
  • A pinch of nutmeg powder
  • 2 tablespoons condensed milk
  • Blanched and slivered pistachios for garnish

Method

  1. Put the strawberries in a blender jar and blend coarsely. 
  2. Heat a non-stick pan, transfer the blended mixture into it, add sugar and cook on medium heat for 5-6 minutes or till the mixture is thick. Allow to cool completely. Refrigerate for 1 hour.
  3. Heat another non-stick pan, add reduced milk and let it to come to a boil. Cook for 6-8 minutes. Add pistachios, chironji, green cardamom powder and nutmeg powder, mix well and cook for 5-6 minutes.
  4. Add condensed milk and mix well. Take the pan off the heat and let the mixture cool completely. Refrigerate till chilled completely.
  5. Add the strawberry mixture to the milk mixture and mix well.
  6. Transfer into a serving bowl, garnish with pistachios and serve chilled.
