Ingredients

  • 1½ cups chopped fresh strawberries
  • 1½ cups rolled oats
  • ¾ cup brown sugar
  • ¼ cup refined flour
  • ½ teaspoon cinnamon powder
  • 2 teaspoons dried ginger powder
  • ½ teaspoon nutmeg powder
  • 1 cup melted butter
  • 2 teaspoons lemon juice
  • A pinch of salt
  • Vanilla ice cream for serving
  • Fresh mint sprigs for garnish

Method

  1. Preheat oven to 180⁰ C.
  2. Take oats in a bowl, add brown sugar, refined flour, cinnamon powder, dried ginger powder, nutmeg powder and melted butter and mix well.
  3. Take a baking dish and spread half the oats mixture evenly. Sprinkle chopped strawberries on top.
  4. Drizzle lemon juice and sprinkle salt. Spread remaining oats mixture on top and press lightly.
  5. Place the baking dish in the preheated oven and bake for 15-20 minutes.
  6. Bring the baking dish from the oven. Cut into pieces and transfer into individual serving plates. Place a scoop of vanilla ice cream on each piece, garnish with mint sprig and serve.
