Urad Vada

Urad dal vada, an excellent crisp tea time snack. The urad dal mixture is mixed with some masalas, shaped into small balls, flattened and deep-fried till golden. Serve these vada with green chutney and cups of hot tea.

Method

  1. Transfer whole black gram into a grinder jar, add ginger, green chillies, cumin seeds, turmeric powder, red chilli powder and salt and grind coarsely.
  2. Add 2-3 tablespoons water and continue to grind coarsely.
  3. Transfer this mixture into a bowl, add white sesame seeds and mix well.
  4. Heat sufficient oil in a kadai. Divide the mixture into equal portions, apply some oil on palms and flatten each portion.
  5. Slide into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
  6. Arrange on a serving platter and serve hot with green chutney.
