Ingredients list for Aloo Ke Masaledar Lachche

  • 8 large Potato
  • Chaat masala
  • to taste Salt
  • 1/2 teaspoon Red chilli powder
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Dry mango powder (amchur)
  • 1 teaspoon Chaat masala

Method

  1. Peel the potatoes, wash and cut into fine matchsticks or grate. Soak in cold water for at least one hour, changing the water twice. Drain and pat dry on a towel.
  2. Heat the oil in a kadai over moderate heat. Add a handful of potato matchsticks at a time and fry, stirring continuously to keep them separate.
  3. Drain when they are pale golden and spread on an absorbent paper to remove excess oil. Mix together salt, red chilli powder, cumin powder, dry mango powder and chaat masala.
  4. Sprinkle this masala mixture over the fried potatoes while they are still hot. Serve like that or cool and store in an airtight container. It will keep for a week.
