Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Aloo Puri Recipe

  • Medium potatoes boiled, peeled and grated 3

  • Whole wheat flour 3/4 cup

  • Refined flour 1/2 cup

  • Salt to taste

  • Carom seeds (ajwain) 1/2 teaspoon

  • Oil 1 tablespo to deep fry

  • Sabzi to serve


Step 1

Take the potatoes in a parat, add salt, carom seeds, whole wheat flour and refined flour and mix well. Add 1 tbsp oil and knead into semi soft dough. Rest the dough for 5 minutes.

Step 2

Heat sufficient oil in a kadai.

Step 3

Divide the dough into equal portions, shape them into balls. Apply a little oil on the work top, place each dough ball on it and roll it into puris.

Step 4

Gently slide in the puris, one at a time, and deep-fry till golden brown and crisp. Drain on absorbent paper.

Step 5

Arrange them on a serving platter and serve hot with a subzi of your choice.
