Ingredients list for Apricot Fool

  • 250 grams Canned apricots
  • 250 grams Dried apricots soaked
  • 2-3 tablespoons Sugar
  • 1/2 cup Whipped cream
  • as required Brown sugar
  • as required Pistachios blanched

Method

  1. Put canned apricots in a mixer jar. Drain and add dried apricots and sugar and grind till smooth. Transfer this mixture into a bowl.
  2. Add 4 tbsps whipped cream and mix. Put into stemmed glasses.
  3. Put the remaining whipped cream into a piping bag fitted with a star nozzle.
  4. Sprinkle a little brown sugar on top of the apricot mixture and pipe a whipped cream rosette on it.
  5. Finally sprinkle a little blanched pistachios, chill and serve.
