Ingredients 

For dressing

  • 4 tablespoons honey
  • 1 1/2 tablespoons lemon juice
  • 5-6 fresh mint leaves, torn
  • 5-6 black peppercorns, crushed
  • Salt to taste

Method

  1. Gently peel and slice the avocado. Set aside a few slices for decoration. Cut the baby corn into strips and blanch in boiling water.
  2. Drain. Mix the ingredients for the dressing in a large bowl. Add all the salad ingredients and toss well. Place in a refrigerator for twenty to thirty minutes to chill. Serve chilled, decorated with avocado slices.
