Ingredients for Avocado And Baby Corn Salad Recipe

  • Avocado 1 large

  • Babycorns 10

  • Green capsicums cut into thin strips 2 medium

  • Tomatoes seeded and cut into strips 2 large

  • Cucumbers cut into thick strips 2 medium

  • For dressing

  • Honey 4 tablespoons

  • Lemon juice 1 1/2 tablespoons

  • Fresh mint leaves torn 5-6

  • Black peppercorns crushed 5-6

  • Salt to taste


Step 1

Gently peel and slice the avocado. Set aside a few slices for decoration. Cut the baby corn into strips and blanch in boiling water.

Step 2

Drain. Mix the ingredients for the dressing in a large bowl. Add all the salad ingredients and toss well. Place in a refrigerator for twenty to thirty minutes to chill. Serve chilled, decorated with avocado slices.
