Ingredients list for Balushahi

  • 1 1/2 cups Refined Flour
  • 2/3 cup + to deep fry Yogurt
  • 1/4 teaspoon Soda bicarbonate
  • 8 tablespoons Yogurt beaten
  • 2 cups Sugar
  • 2 tablespoons Milk
  • 4-5 Pistachios finely chopped

Method

  1. Place the refined flour in a bowl. Add soda bicarbonate and mix.
  2. Add two third cup olive oil and mix. Add yogurt and mix.
  3. Add a little milk and knead into a soft dough.
  4. Rest the dough for forty five minutes.
  5. Heat together sugar and one cup of water till it reaches a two-string consistency.
  6. . Midway through add milk and when the scum rises to the surface remove and discard.
  7. Divide the dough into equal lemon sized portions and shape into smooth balls.
  8. Make a slight dent in the centre with your thumb and rest the balls for a few minutes.
  9. Heat sufficient olive oil in a kadai.
  10. When the oil is medium hot, gently slide in the balls and deep fry on low heat till golden.
  11. Drain and place them on a plate.
  12. Drizzle the syrup on the balushahis.
  13. Garnish with pistachios and serve when cooled.
