French cuisine consists of cooking traditions and practices from France. At one time French cuisine was heavily influenced by Italian cuisine.  It was in the 17th century that some chefs led a movement that developed France’s own indigenous style by shifting it away from its foreign influences. Cheese and wine are a major part of the cuisine, playing different roles regionally and nationally, with many variations.
French cuisine was codified in the 20th century as the modern haute cuisine. Knowledge of French cooking has contributed significantly to Western cuisines and its criteria are used widely in Western cookery school boards and culinary education. 
French regional cuisine is characterized by its extreme diversity and style. Traditionally, each region of France has its own distinctive cuisine.

Ingredients for Baguette Recipe

  • Refined flour 1 3/4 cups to sprinkle

  • Fresh yeast 1 tablespoon

  • Castor sugar 3 teaspoons

  • Salt 1 teaspoon

  • Oil for greasing

  • Cream cheese as required

  • Honey for drizzling

  • Black coffee to serve

Method

Step 1

Take yeast in a bowl, add 1 tsp sugar and 1 tbsp warm water, mix well and set aside to activate for 10 minutes.

Step 2

Sift refined flour into a large bowl, add salt and remaining sugar and mix well. Make a well in centre and add the yeast mixture. Add sufficient water and knead into soft dough. Dust a little flour on the worktop, keep the dough on it and bring it together to form a ball. Grease a bowl with oil, keep the dough in it, cover with a moist muslin cloth and set aside to prove for 20-25 minutes.

Step 3

Dust the worktop with flour, keep the dough on it and knockback. Roll the dough and flatten it, again roll and flatten the dough. Roll and shape into thick long log.

Step 4

Line a tray with a kitchen towel. Dust some flour and place the rolled baguette on it. Place two rolling pins under the cloth, close to the dough log and set aside to prove for 10-15 minutes.

Step 5

Preheat the oven to 180˚C.

Step 6

Spray some oil on a baking tray and place the baguette on it. Make diagonal slits on the baguette. Spray water on top of the baguette.

Step 7

Keep the tray in the preheated oven and bake for 15-20 minutes. Bring the tray out of the oven, place the baguette on the chopping board and allow to cool.

Step 8

Slice the bread diagonally into slices. Apply cream cheese on each slice and transfer onto a serving plate. Drizzle honey over the slices and serve with black coffee.
