Ingredients list for Baked Onions With Sun Dried Tomatoes
- 500 grams Pearl onions peeled
- 8-10 Sundried Tomatoes chopped
- 1 tablespoon Olive oil
- 8 cloves Garlic crushed
- 10 Baby potatoes boiled and peeled , halved
- 1/2 spring Fresh rosemary
- to taste Salt
- 1 teaspoon Black peppercorns crushed
- 1/2 cup Fresh bread crumbs
- 2 tablespoons Fresh parsley chopped
Method
- Preheat oven to 180° C. Heat olive oil in a pan and sauté garlic for half a minute. Gently toss onions, potatoes, adding fresh rosemary and sun dried tomatoes.
- Add salt and crushed peppercorns. Transfer into a baking dish. Top with fresh breadcrumbs and parsley. Bake at 180°C for twenty to twenty five minutes.
- Serve hot.
