History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Balushahi Recipe

  • Refined Flour 1 1/2 cups

  • Yogurt 2/3 cup + to deep fry

  • Soda bicarbonate 1/4 teaspoon

  • Yogurt beaten 8 tablespoons

  • Sugar 2 cups

  • Milk 2 tablespoons

  • Pistachios finely chopped 4-5


Step 1

Place the refined flour in a bowl. Add soda bicarbonate and mix.

Step 2

Add two third cup olive oil and mix. Add yogurt and mix.

Step 3

Add a little milk and knead into a soft dough.

Step 4

Rest the dough for forty five minutes.

Step 5

Heat together sugar and one cup of water till it reaches a two-string consistency.

Step 6

. Midway through add milk and when the scum rises to the surface remove and discard.

Step 7

Divide the dough into equal lemon sized portions and shape into smooth balls.

Step 8

Make a slight dent in the centre with your thumb and rest the balls for a few minutes.

Step 9

Heat sufficient olive oil in a kadai.

Step 10

When the oil is medium hot, gently slide in the balls and deep fry on low heat till golden.

Step 11

Drain and place them on a plate.

Step 12

Drizzle the syrup on the balushahis.

Step 13

Garnish with pistachios and serve when cooled.
