Ingredients for Banana Coconut Loaf Recipe

  • Ripe bananas peeled and mashed 3 large

  • Desiccated coconut 2 cups

  • Butter ½ cup + for greasing

  • Honey ½ cup

  • Refined flour (maida) 1 cup + for dusting

  • Baking powder 1 teaspoon

  • Eggs 4

  • Zest of 2 lemons

  • Salt to taste

Method

Step 1

Preheat oven to 180°C. Grease a loaf tin with some butter and dust with some flour.

Step 2

Heat a non-stick pan. Add honey and butter, mix and let the butter melt. Transfer into a bowl.

Step 3

Add bananas, desiccated coconut, flour, baking powder, melted honey-butter mixture, eggs, lemon zest and salt and mix till well combined.

Step 4

Pour the prepared mixture into the lined tin, place the tin in the preheated oven and bake for 1 hour. Remove from oven, cool and demould.

Step 5

Slice and serve.
