Ingredients list for Banana Walnut Crumb Muffins

  • 3 Ripe Banana peeled and mashed
  • 1/4 cup Walnuts coarsely chopped
  • 1 1/2 cups Refined flour (maida)
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Baking soda (soda bicarbonate)
  • 3/4 cup Castor sugar
  • 1 Egg whisked
  • 1/3 cup Melted butter
  • 1/2 teaspoon Cinnamon powder
  • For Crumb
  • 2 tablespoons Refined flour (maida)
  • 1 teaspoon Cinnamon powder
  • 1 tablespoon Butter

Method

  1. Preheat oven to 190° C.
  2. Mix refined flour, baking powder and baking soda in a bowl and set aside.
  3. Mix bananas, castor sugar, whisked egg, butter, walnuts and cinnamon powder in another bowl.
  4. Add banana mixture, slowly, to the flour mixture and fold in lightly till well blended.
  5. To make the crumb, mix refined flour and cinnamon powder in a third bowl. Add butter and rub in with fingertips till the mixture resembles breadcrumbs.
  6. Spoon the batter into individual muffin moulds and place some crumb mixture on top of each. Place them on a baking tray, keep the tray in the preheated oven and bake for eighteen to twenty minutes.
  7. Remove from the moulds and serve.
