Ingredients list for Banana Yogurt Muffins
- 2 Bananas
- 1 cup Yogurt
- 1¾ cups Refined flour (maida)
- ½ cup Butter
- ½ cup Castor sugar (caster sugar)
- 1 Egg beaten
- 1 teaspoon Vanilla essence
- ½ teaspoon Baking soda
- ¼ cup Chocolate chips
Method
- Preheat oven to 180ºC.
- Cream together butter and sugar in a bowl till light and fluffy.
- Add egg and vanilla essence and beat till well incorporated.
- Sift together the flour and baking soda in another bowl. Add chocolate chips and mix.
- Add the flour mixture and yogurt to the butter-sugar mixture and beat well.
- Peel and roughly chop bananas and add to the bowl. Beat again to make a smooth batter.
- Spoon the batter into individual muffin moulds upto ¾ full, place them on a baking tray, place the tray in the preheated oven and bake for 15-20 minutes. Remove from oven and cool.
- Demould and serve.
