Ingredients list for Banana and Oats Cake

  • 3 Bananas peeled and pureed
  • 1/2 cup Oats
  • Refined flour (maida) 1 cup + for dusting
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • to taste Salt
  • Melted butter 6 tablespoons + for greasing
  • 1 teaspoon Vanilla essence
  • 1 cup Castor sugar
  • 1/2 cup Buttermilk
  • 2 Eggs

Method

  1. Preheat oven to 180º C. Grease 2 cake tins with butter and dust with some flour.
  2. Sift together flour, baking powder and baking soda into a bowl. Add salt and oats and mix well.
  3. Add butter, banana puree and vanilla essence and mix well. Add castor sugar and mix well.
  4. Add buttermilk and mix till well blended. Add eggs and mix well to a smooth batter.
  5. Divide the batter equally into 2 cake tins and spread evenly and thinly. Place the tins in the preheated oven and bake for 25-30 minutes.
  6. Remove from oven and cool down to room temperature. Remove the cake from the tins, cut into wedges and serve.
