Ingredients list for Banana and Prune Cake

  • 2 Banana pureed
  • ½ cup Prunes roughly chopped
  • 5 Eggs
  • 250 grams Castor sugar (caster sugar)
  • 1 teaspoon Vanilla essence
  • 250 gms + Butter
  • 225 gms + Refined flour (maida)
  • 1 teaspoon Baking powder
  • ½ teaspoon Soda bicarbonate

Method

  1. Preheat oven to 180˚C. Grease a cake tin and dust with a little dry flour.
  2. Break eggs into a bowl, add sugar and vanilla essence and beat with an electric beater till creamy.
  3. Add butter and continue to beat till smooth. Add banana puree and prunes and beat again.
  4. Sieve together refined flour, baking powder and soda bicarbonate into the bowl and mix by the cut and fold method.
  5. Pour the mixture into the greased cake tinand place it in the preheated oven. Bake for 35-40 minutes. Remove from oven and cool down to room temperature.
  6. Remove the cake from the tin and cut into pieces. Serve warm.
