Bathue Ka Raita A raita preparation with coarsley grind bathua leaves and yogurt served chilled garnished with red chilli powder and roasted cumin seeds. This is a Sanjeev Kapoor exclusive recipe. Blanch them in two cups of water for two to three minutes. Drain, cool and grind coarsely. Dry roast cumin seeds and grind to a fine powder. Whisk yogurt with salt, pepper powder, half the roasted cumin seed powder and half the red chilli powder. Add the ground bathua and mix well. Transfer into a serving dish, garnish with the remaining roasted cumin seed powder and red chilli powder and serve chilled.
