Ingredients for Berries and Oat Walnut Muffins Recipe

  • Mixed berries 1/2 cup

  • Oats 3/4 cup

  • Walnuts chopped roasted 1/4 cup

  • Refined flour (maida) 1/2 cup

  • Butter 1/2 cup

  • Castor sugar (caster sugar) 1/2 cup

  • brown sugar/jaggery powdered 1/2 cup

  • Eggs 2

  • Vanilla essence 1 teaspoon

  • Baking powder 1 teaspoon

  • Baking soda 1/2 teaspoon

  • Milk 1/2 cup


Step 1

Preheat oven at 180° C. Line individual silicon muffin moulds with paper cupcake moulds.

Step 2

Cream together butter, castor sugar and brown sugar in a bowl. Add eggs and mix. Add vanilla essence, mixed berries, walnuts and oats and mix well.

Step 3

Sieve in flour, baking powder and baking soda and fold well.

Step 4

Fill in ¾ of each lined silicon muffin moulds with prepared berries-oats mixture and tap.

Step 5

Put the prepared silicon muffin moulds on a baking tray. Place the baking tray in preheated oven and bake for 25-30 minutes.

Step 6

Demould and serve.
