Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Besan Tikka Masala Recipe

  • Gram Flour 1 cup

  • Salt 1 to taste

  • Red chilli powder 2 as required

  • Asafoetida 1/2 teaspoon

  • Oil 2 tablespo for shallow-frying

  • Cumin seeds 1 teaspoon

  • Medium onion finely chopped 1

  • Ginger-garlic paste 1 tablespoon

  • Medium tomatoes roughly chopped 2

  • Green chilli finely chopped 1

  • Tomato puree 1/2 cup

  • Green chilli 2 for garnishing

Method

Step 1

Put gram flour, salt, 1 tsp red chilli powder and asafoetida into a bowl and mix. Add 1 cup water and whisk to make a smooth batter.

Step 2

Heat a deep non-stick pan, add gram flour batter and cook, stirring continuously to avoid forming any lumps. Cook till the mixture thickens. Add a little more water and continue to cook for 20-25 minutes, stirring occasionally, to get a smooth consistency.

Step 3

Grease a barfi tray with oil, pour gram flour mixture into it and keep aside to cool down to room temperature and set.

Step 4

Heat 2 tbsps oil in another deep non-stick pan, add cumin seeds and onion and sauté till golden.

Step 5

Add ginger-garlic paste, mix well and saute for 1 minute. Add tomatoes, mix and continue to saute till tomatoes become pulpy.

Step 6

Once the gram flour mixture sets, cut into square tikkas.

Step 7

Heat sufficient oil in a shallow non-stick pan.

Step 8

Add green chilli and remaining red chilli powder ton the gravy and mix well. Add tomato puree and mix well and continue to cook.

Step 9

Add the besan tikkas to the shallow pan and shallow-fry, turning sides, till golden.

Step 10

Add the besan tikkas to the tomato masala and toss well.

Step 11

Transfer into a serving bowl, garnish with green chillies and serve hot.
