The Bengalis are great food lovers and take pride in their cuisine.  In fact so obsessed are they about food, that the man of the house goes to the market daily to buy a fresh supply vegetables and fish which is a must in their daily menu.  The medium of cooking is mustard oil which adds its own pungency.  Another very important item of Bengali cuisine is the variety of sweets or mishti as they call them.  Most of them are milk based and are prepared from chhena.
A meal, for the Bengali, is a ritual in itself.  Bengalis spend not only the great deal of time thinking about the food but also on its preparation and eating.

Cook time : 16-20 minutes

Ingredients for Bhapa Sandesh Recipe

  • Cow’s milk 2 litres

  • Condensed Milk

  • Condensed milk 1/2 tin

  • Pistachios finely chopped 15-20

Method

Step 1

Heat milk and when it comes to a boil add two tablespoons of lemon juice. Stir and continue to heat till all the milk curdles and separates from the whey.

Step 2

Strain and hang the chenna in a muslin cloth till all the whey is drained away. Transfer the chenna into a mixer, add condensed milk and blend till smooth.

Step 3

Transfer into a flat bottomed container. Cover with an aluminium foil. Steam in a cooker for about fifteen minutes. Once the pressure comes down, take it out and cut into squares or diamonds.

Step 4

Cool, sprinkle pistachios and serve.
