Bhindi Amchur

Ingredients 

  • 200 gms ladyfingers
  • 1 teaspoon dried mango powder
  • ½ teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • Salt to taste
  • 1 teaspoon fennel seeds (saunf), crushed
  • ½ teaspoon garam masala powder
  • ¼ teaspoon red chilli powder
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon chaat masala
  • 1 tablespoon chopped fresh coriander leaves
  • 2 tablespoons oil

Method

  1. Mix turmeric powder, coriander powder, salt, crushed fennel seeds, dried mango powder, garam masala powder, red chilli powder, roasted cumin powder, chaat masala, coriander leaves in a bowl.  
  2. Trim the lady fingers at both ends, make a slit on one side without cutting through. Stuff the masala mixture into the slits of ladyfingers.
  3. Heat oil in a non-stick pan, add the stuffed ladyfingers and cook on a low heat for 2-3 minutes. Sprinkle the remaining masala on top, cover and cook for 5 minutes.
  4. Remove the cover and cook for 5 more minutes. Serve hot.
