Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Bhuni Makai ka Soup - SK Khazana Recipe

  • Corn kernels (makai) 2 cups

  • Olive oil 1 tablespoon

  • Butter 1 tablespoon

  • Garlic cloves 4-5

  • Large onion sliced 1

  • Vegetable stock 4 cups

  • Salt to taste

  • Black peppercorns crushed to taste

  • Fresh coriander leaves chopped 1 tablespoon


Step 1

Heat oil and butter in a deep non-stick pan. Add garlic and onion, mix and sauté till onions turn golden brown.

Step 2

Add corn kernels and mix. Add vegetable stock and mix. Add salt and crushed peppercorns, mix, cover and simmer till corn kernels are tender.

Step 3

Blend with a hand blender till smooth, strain into another pan and heat.

Step 4

Add coriander leaves, salt and crushed peppercorns, mix well and simmer for 2 minutes.

Step 5

Sprinkle some crushed peppercorns and serve hot.
