Ingredients list for Bhurji Pav - SK Khazana
- 6 Eggs
- 8 Pavs
- 2 tablespo teaspoons Oil
- 2 Medium onions finely chopped
- 2 Green chillies finely chopped
- 2 Medium tomatoes finely chopped
- 1 1/2 teaspoons Red chillies powder
- 2 teaspoons Cumin powder
- 2 teaspoons Coriander powder
- 1/2 teaspoon Turmeric powder
- to taste Salt
- 4 tablespoons Milk
- 2 tablespo to garnish Fresh coriander leaves finely chopped
- 2 tablespoons Butter
Method
- Heat 2 tablespoons oil in a non-stick pan, add onions and saute till translucent. Add green chillies
and sauté till onions turn a light golden. - Break eggs into a bowl and beat well.
- Add tomatoes to sautéed onions and sauté till soft. Add chilli powder, cumin powder, coriander powder, turmeric powder and salt and sauté till tomatoes become soft.
- Add milk to beaten eggs and beat well. Pour the egg mixture into the pan, mix continuously till they get scrambled and are done. Add coriander leaves and mix well.
- Heat butter and remaining oil in another non-stick pan.
- Slit the pavs keeping one side intact, place them in the pan, with cut side downwards, and toast turning sides till both sides are light golden brown.
- Transfer bhurji into a serving bowl, garnish with a coriander sprig and serve hot with toasted pavs.
