Ingredients for Blueberry Oatmeal Cake Recipe

  • Fresh blueberries 200 grams + to top

  • Rolled oats 1/2 cup + to sprinkle

  • Refined flour (maida) 3/4 cup + for dusting

  • Butter 120 grams + for greasing

  • Castor sugar (caster sugar) 3/4 cup

  • Vanilla essence 1 teaspoon

  • Eggs 3

  • Baking powder 1 teaspoon

  • Milk 1 tablespoon

  • Mixed seeds (pumpkin seeds, sunflower seeds, melon seeds) 2 tablespoons


Step 1

Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.

Step 2

Take butter in a mixing bowl, add castor sugar and beat with an electric beater till light and fluffy.

Step 3

Add vanilla essence and beat again. Add eggs, one at a time, and beat after each addition.

Step 4

Sieve together flour and baking powder into the mixture. Add oats and blueberries and fold in well. Add milk and mix well.

Step 5

Transfer the batter into the prepared tin and tap lightly. Sprinkle some oats, some blueberries and some mixed seeds.

Step 6

Keep the tin in the preheated oven and bake for 20-25 minutes. Remove the tin from the oven, cool and demould.

Step 7

Slice, arrange them on a serving platter and serve.
