Ingredients 

  • 2 cups refined flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Salt to taste
  • 1½ cups buttermilk
  • 1 egg
  • 8 tablespoons oil
  • 4 medium onions

Method

  1. Sift flour, baking soda, baking powder and salt into a bowl. Add buttermilk and salt and whisk.
  2. Add the egg and whisk. Add 3 tablespoons of oil and whisk. Add water to adjust the consistency and whisk to a smooth batter.
  3. Thickly slice the onion.
  4. Heat 4 tablespoons of oil in one non-stick pan and 1 tsp of oil in another non-stick pan.
  5. Spread a ladle full of batter thickly in the second pan and cook.
  6. Add onions to the first pan and saute. Diagonally slice the chilli chicken sausages and add them to this pan. Add mixed herbs and salt, mix, and saute for 2-3 minutes.
  7. Turn the pancake when the underside is golden and cook the other side similarly. Similarly cook the remaining pancakes.
  8. Spread the sausage mixture equally over each pancake.
  9. Garnish with a sprig of curly parsley and serve immediately.
