Broccoli and Cheese Casserole

Florets of broccoli stir fried with garlic, mixed with white sauce and cheese, topped with grated potatoes and more cheese – packed into a casserole and baked! This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 medium broccoli ,separated into florets and blanched
  • ½ cup grated processed cheese 
  • 1 olive oil
  • 4-5 garlic cloves, finely chopped
  • 2 teaspoons pine nuts(chilgoza), toasted
  • 2 cups white sauce
  • Salt to taste
  • White pepper powder to taste
  • 2 medium potatoes, parboiled and grated

Method

  1. Heat olive oil in a non-stick pan, add garlic and sauté for thirty seconds. Add broccoli and toss.
  2. Add pine nuts, white sauce and mix. Add salt, pepper powder and mix well. Remove from heat, add half the processed cheese and mix well.
  3. Preheat oven to 180°C.
  4. Transfer the broccoli mixture into a six inch square glass baking dish and top with the potatoes and remaining cheese.
  5. Place the dish in the preheated oven and bake for ten to fifteen minutes.
  6. Serve hot.
