Ingredients list for Brown Bread Pudding

  • 8 slices Brown Bread
  • 4 medium Brown Sugar peeled, pitted and diced
  • 3/4 cups Brown sugar
  • 3 Eggs
  • 1 cup Skimmed milk
  • 1/2 cup Fresh cherries pitted and halved

Method

  1. Preheat oven to 180°C. Cook the diced peaches with half the brown sugar in one cup of water. Lightly toast brown bread slices and cut into triangles.
  2. Break eggs into a bowl and beat slightly. Add remaining brown sugar and milk and mix. Once the peaches turn soft, blend with a hand blender.
  3. Arrange the toast triangles in a baking dish. Arrange half of the prepared cherries over them. Add the egg mixture to the fruit puree and mix well.
  4. Pour over the bread in the baking dish. Arrange the remaining cherries on top and bake in the preheated oven at 180°C for thirty minutes. Serve warm.
