Ingredients

  • 30 spinach leaves, finely chopped
  • 3 medium potatoes boiled & grated
  • 1 tbsp oil
  • 1 medium onion finely, chopped                    
  • 4 cups vegetable stock                                 
  • Salt to taste
  • ½ tsp pepper powder                                    
  • ½ cup milk                                                     

Method

  1. Heat oil in a deep pan.  Add chopped onion and sauté for a couple of minutes taking care that the colour of onion does not change.
  2. Add the vegetable stock and bring it to a boil.
  3. Add grated potato and finely chopped spinach leaves and cook till the leaves are tender.  Add salt to taste and pepper powder.
  4. Add milk and bring to a boil.
  5. Serve piping hot.
