How to make Calzone -

The main difference between Italian and Indo Italian dishes is that the dishes which require stuffing, Indian vegetables and masalas replace the authentic Italian ones. 
Authentic Italian foods use the typical Italian herbs to flavour but very little chillies. And since we Indians like our food to be spicier, plenty of chilli flakes do the needful.

Ingredients for Calzone Recipe

  • Refined flour (maida) 1¼ cups + for dusting

  • Yeast 10 grams

  • Salt to taste

  • Butter 50 grams

  • Paneer (cottage cheese) bhurji 1 cup

  • Milk for sealing and wash

Method

Step 1

Add 1-2 tablespoons water to yeast and heat in the microwave for 10 seconds. Remove from heat and mix well.

Step 2

Put flour, salt, yeast and butter in a bowl. Add sufficient water and knead into a soft dough. Set aside for 5-10 minutes.

Step 3

Grease a baking tray with little oil.

Step 4

Divide dough into large portions and roll out into a large disc dusting with flour. Cut roundels from them using a round cutter.

Step 5

Place a roundel on a worktop and put a spoonful of bhurji on it. Apply milk on the edges and bring the edges together to make a crescent shape. Seal the edges by pressing with the help of a fork. Similarly make remaining calzones.

Step 6

Place calzones on greased tray and cover with a muslin cloth. Set aside to prove for 30 minutes.

Step 7

Preheat oven to 180°C.

Step 8

Apply milk wash on calzones and place tray in preheated oven. Bake for 15 minutes.

Step 9

Remove from heat and serve.
