Ingredients

  • 400 gms button mushrooms
  • 1 medium onion
  • 6 garlic cloves
  • 3 tbsps olive oil
  • Crushed black peppercorns to taste
  • 2 sprigs thyme
  • Salt to taste
  • Black pepper powder to taste
  • 500 ml fresh cream
  • 600 ml vegetable stock
  • 30 gms butter
  • 4 tbsps extra virgin olive oil
  • 60 ml cream, whipped
  • 1 tbsp coarsely powdered cumin seeds
  • 1 tbsp coarsely powdered coriander seeds 

Method

  1. Slice mushrooms and onion and crush garlic cloves.
  2. Heat olive oil in a deep non stick pan, add garlic, crushed black peppercorns, thyme and onion and sauté till golden brown. Add mushrooms and sauté over high heat till golden brown. Add salt and black pepper powder and sauté for 1 minute.
  3.  Add fresh cream and vegetables stock and cook till mushrooms soften. Transfer into a bowl and blend into a puree with a hand blender.
  4. Heat butter in another deep non stick pan and pour the puree in it. Add 2 tbsps extra virgin olive oil and mix well.
  5. Garnish with whipped cream, cumin powder, coriander powder and remaining extra virgin olive oil and serve hot.
