Put the chocolate into the bowl and allow it to melt, stirring occasionally. Once melted, stir continuously to remove lumps and temper the chocolate. Pour the tempered chocolate into the moulds, swirl so that chocolate spreads evenly, pour the excess back into the bowl leaving a thin layer of chocolate in the moulds. Keep the mould in the refrigerator for the shells to set. Fill caramel into a piping bag, pipe the caramel into the prepared chocolate shells. Sprinkle chopped walnuts on top and press lightly with the back of a spoon to level the surface. Cover with a layer of tempered chocolate and scrape the excess back into the bowl.
