Ingredients list for Carrot-Coconut Rice

  • 2 1/2 cups Cooked Rice
  • 1 medium Carrot grated
  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Split Bengal gram (chana dal)
  • 1 teaspoon Split black gram skinless (dhuli urad dal)
  • 3-4 Dry red chilies
  • 4-5 Curry leaves
  • 1 cup Scraped coconut
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Coriander powder
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 1 cup Fresh coriander leaves chopped

Method

  1. Heat oil in a non-stick pan. Add cumin seeds, mustard seeds, chana dal, urad dal, red chillies and curry leaves and saute for a minute.
  2. Add coconut, carrot, red chilli powder, coriander powder, turmeric powder and salt and mix well and cook till the carrots get cooked.
  3. Add the rice and toss well. Serve hot garnished with coriander leaves.
