How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Carrot-Coconut Rice Recipe

  • Cooked Rice 2 1/2 cups

  • Carrot grated 1 medium

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Mustard seeds 1 teaspoon

  • Split Bengal gram (chana dal) 1 teaspoon

  • Split black gram skinless (dhuli urad dal) 1 teaspoon

  • Dry red chilies 3-4

  • Curry leaves 4-5

  • Scraped coconut 1 cup

  • Red chilli powder 1 teaspoon

  • Coriander powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 1 cup

Method

Step 1

Heat oil in a non-stick pan. Add cumin seeds, mustard seeds, chana dal, urad dal, red chillies and curry leaves and saute for a minute.

Step 2

Add coconut, carrot, red chilli powder, coriander powder, turmeric powder and salt and mix well and cook till the carrots get cooked.

Step 3

Add the rice and toss well. Serve hot garnished with coriander leaves.
