Karnataka cuisine comprises of many vegetarian and non-vegetarian dishes that are full of flavour and taste. It is one of the oldest surviving cuisines and its origins can be traced back to the Iron Age. 
The varieties in Karnataka cuisine have influenced the neighbouring states like Tamil Nadu, Andhra Pradesh, Kerala and Maharashtra. The cuisine also reflects influences from these four neighbouring states on its food habits. 
Being a coastal state, coconut is grown in abundance. Needless to say coconut in its various forms like oil, milk, fresh and dried coconut is put to excellent use in its cuisine.

Ingredients for Chakkuli Recipe

  • Refined Flour 2 cups

  • Sesame Seeds 2 teaspoons

  • Salt to taste

  • Oil to deep fry

Method

Step 1

Sieve the refined flour.

Step 2

Tie up the flour tightly in a muslin cloth like a potli, place it in a shallow vessel and steam in a cooker for about ten to fifteen minutes.

Step 3

Take the potli out and set aside to cool.

Step 4

The maida will set like a hard ball.

Step 5

Break the maida ball to small pieces, powder them and sieve into a bowl.

Step 6

Add the sesame seeds and salt to taste and mix.

Step 7

Add sufficient water to make a soft dough.

Step 8

Put a portion of the dough in a chakli press and shape into round chaklis on butter paper.

Step 9

Heat sufficient oil in a kadai and deep fry the chaklis, a few at a time, till light golden.

Step 10

Drain and place them on an absorbent paper.

Step 11

Store in an airtight container when cooled.
