History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Chana Jor Garam Tikki Recipe

  • Chana chor garam 2 cups

  • Potatoes boiled and peeled 4 medium

  • Coriander powder 2 teaspoons

  • Red chilli powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Green chillies chopped 2

  • Fresh coriander leaves chopped 2 tablespoon

  • Salt to taste

  • Fresh bread crumbs 1 cup

  • Stuffing

  • cottage cheese (paneer) grated 1/2 cup

  • Processed cheese grated 2 tablespoon

  • Salt a pinch

  • Green chilli chopped 1

  • Fresh coriander leaves chopped 1 tablespoon

  • Oil for greasing + to deep fry

  • Corn flour-refined flour slurry as required

  • Micro greens for garnish

  • Green chutney to serve


Step 1

Grate potatoes in a large bowl, add coriander powder, red chilli powder, turmeric powder, green chillies, coriander leaves, salt and bread crumbs and mix well.

Step 2

For the stuffing, Take cottage cheese in another bowl, add processed cheese, green chilli and coriander leaves and mix well.

Step 3

Take chana jor garam in a zip lock bag and coarsely crush using a rolling pin. Transfer on a plate. Grease your palms with oil and take a portion of the potato mixture and make a cavity in the centre and stuff with a portion of the stuffing. Shape into a tikki.

Step 4

Dip each tikki in the slurry and roll on crushed chana jor garam.

Step 5

Heat sufficient oil in a kadai and slide in the tikkis and deep fry till golden brown and crisp. Drain on an absorbent and transfer on to a serving plate.

Step 6

Garnish with micro greens and serve hot with green chutney.
