How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Chawal Ki Kheer - SK Khazana Recipe

  • Rice washed, soaked and drained 3/4 cups

  • Milk 2 litres

  • cahew nuts 8-10

  • almonds 8-10

  • green cardamoms 3

  • sugar 1/2 cup

  • muskmelon seeds 2 tablespoons

  • raisins 2 tablespoons

  • A few saffron strands soaked in 1 tsp water


Step 1

Roughly chop cashewnuts and almonds. Open green cardamom pods.

Step 2

Pour milk into a deep pan and bring it to a boil. Reduce heat and keep cooking till it is reduced to half.

Step 3

Add rice, mix well and cook on medium heat, stirring continuously, for 15-20 minutes or till the rice is almost cooked.

Step 4

Add sugar and mix till sugar dissolves and further cook for 1-2 minutes. Add green cardamoms, chopped nuts, melon seeds and raisins and mix well. Cook for 1-2 minutes.

Step 5

Add saffron water, mix and reduce the heat to low and cook till mixture thickens. Transfer into serving bowl and serve.
