How to make Cheese Kurkure -

Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Cheese Kurkure Recipe

  • Mozzarella cheese grated 3 tablespoons

  • Processed cheese cut into ½ cm small cubes 30 grams

  • Refined flour (maida) 1 cup + 1 tablespoon + for coating

  • Salt to taste

  • Baking soda ¼ teaspoon

  • Yogurt 2 tablespoons

  • Oil 1 tablespoon + to deep fry

  • Dried oregano 1 teaspoon

  • Red chilli flakes ½ teaspoon

  • Crushed black peppercorns to taste

  • Tomato ketchup as required


Step 1

Take 1 cup flour in a bowl. Add salt, baking soda, yogurt and some water and knead into a soft dough. Add oil and knead well. Set aside for 5-10 minutes.

Step 2

Take mozzarella cheese in a bowl. Add processed cheese, dried oregano, chilli flakes, crushed peppercorns and salt and mix lightly.

Step 3

Heat sufficient oil in a pan.

Step 4

Divide the dough into equal portions, roll in some flour and roll them out to thin discs. Cut each disc into rectangles.

Step 5

Take 1 tablespoon flour in another bowl. Add 2-3 tablespoons water and mix well to make a thick slurry.

Step 6

Apply some slurry on 2 sides of each rectangle. Put some cheese mixture in the center, and fold, applying some slurry on the edges to make thick rolls.

Step 7

Deep-fry these rolls in hot oil till golden and crisp. Drain on absorbent paper.

Step 8

Keep some shot glasses on a serving platter and put some tomato ketchup in each glass.

Step 9

Place one fried roll in each glass and serve hot.
