Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Ingredients for Cheese and Pistachio Truffles Recipe

  • Cream cheese 2 tablespoons

  • Feta cheese 2 tablespoons

  • Pistachios chopped for coating

  • Biscuits cracker 12-15

  • Salt to taste

  • Red chilli flakes 1 teaspoon

  • Rosemary chopped 1 teaspoon

  • Crushed black peppercorns to taste

  • Paneer (cottage cheese) grated ½ cup

Method

Step 1

Coarsely grind cracker biscuits in a food processor and transfer into a bowl.

Step 2

Take cream cheese in another bowl. Add feta cheese, salt, chilli flakes, rosemary and crushed peppercorns and mix. Add cottage cheese and ground biscuits and mix well.

Step 3

Divide the cheese mixture into equal portions and shape into balls.

Step 4

Coat each ball with pistachios and refrigerate for 10-15 minutes.

Step 5

Serve chilled.
