Cheesy Pesto and Egg Melts

Ingredients list for Cheesy Pesto and Egg Melts

  • for garnish Mozzarella cheese grated, 4 tablespoons +
  • 4 tablespoons Processed cheese grated
  • 2 tablespoons Parmesan cheese grated
  • 1 tablespoon Pesto sauce
  • 8 Eggs bolied
  • 8 White bread slices
  • to taste Crushed black peppercorns
  • a pinch Salt
  • as required Butter

Method

  1. Grate eggs into a bowl. Add pesto sauce, 3 tablespoons mozzarella cheese, crushed peppercorns, salt, processed cheese and Parmesan cheese and mix well.
  2. Apply butter on 4 bread slices. Top with a generous portion of egg-cheese mixture, sprinkle remaining mozzarella cheese on top and cover with remaining 4 bread slices. Spread some more butter on top.
  3. Heat a non-stick sandwich grilling machine. Place the sandwiches on it, cover and grill till grill marks appear on both sides and the cheese melts.
  4. Cut into rectangles and serve hot.
