Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Cheesy Pesto and Egg Melts Recipe

  • Mozzarella cheese grated, 4 tablespoons + for garnish

  • Processed cheese grated 4 tablespoons

  • Parmesan cheese grated 2 tablespoons

  • Pesto sauce 1 tablespoon

  • Eggs bolied 8

  • White bread slices 8

  • Crushed black peppercorns to taste

  • Salt a pinch

  • Butter as required

Method

Step 1

Grate eggs into a bowl. Add pesto sauce, 3 tablespoons mozzarella cheese, crushed peppercorns, salt, processed cheese and Parmesan cheese and mix well.

Step 2

Apply butter on 4 bread slices. Top with a generous portion of egg-cheese mixture, sprinkle remaining mozzarella cheese on top and cover with remaining 4 bread slices. Spread some more butter on top.

Step 3

Heat a non-stick sandwich grilling machine. Place the sandwiches on it, cover and grill till grill marks appear on both sides and the cheese melts.

Step 4

Cut into rectangles and serve hot.
